21 Day Fix Chicken Chili


One of my all time favorite recipes is the TurboFire chili. But now that I'm following the 21 Day Fix I decided that I wanted to try to make some new recipes to share with my awesome challengers!! Something just kept bringing me back to that chili. Maybe it is the fact that I'm SUPER busy these days, as are ALL moms...right??? And I needed something to throw in my Crock Pot and get out the door!! Then I thought "why mess with a good thing?". So I made one SMALL tweak and viola!! A new recipe was born!! I love the chicken chunks in this version because it makes it a little more hearty but doesn't change the nutrition too much. Give it a try and let me know what you think!!



INGREDIENTS:
3 chicken breasts - cooked and chopped into cubes
2 cans diced or stewed tomatoes with green chilies
8oz whole kernel corn, canned
1/2 onion diced
2 garlic cloves (I used minced....and A LOT OF IT)
16oz can of Black Beans
16oz  can of Kidney Beans
1 Tbsp Tomato Paste
Home made seasoning mix - Cumin, Chili Powder and Mrs Dash Chipotle seasoning.  Add to desired taste...I put a LOT :) its all salt free and a "free food" on the program.
4 oz low fat shredded cheddar cheese (optional)

DIRECTIONS:
 Place all ingredients except the cheese into the crock pot. Cook on low for 4 hours or high for 2 hours. Top with 1 oz cheese per serving if desired.

21 Day Fix containers: Fill one GREEN container with chili and serve in your bowl. You will need to mark off one RED and one YELLOW container from your daily container allotment. (pg. 71 in guide book)
