Salsa Boats

Last week I tried some new snacks on my meal plan and these Salsa Boats, from the T25 cook book, are off-the-hook good!! I know, it's nothing fancy or necessarily different but I think the combination of the Dijon mustard and the salsa just set my taste buds on fire! In fact I even swapped out some of my regularly planned snacks for this throughout the week! I found that if you're looking for a smoother texture you can just mix/mash it more, but the pieces of yolk didn't bother me.

Makes 1 serving

2 large hard-boiled eggs
1 tsp Dijon mustard
2 tsp fresh salsa

* Cut eggs in half and remove yolks
* Combine egg yolks with mustard in a small bowl and mix well
* Spoon egg yolk mixture evenly into egg white halves
* Top each egg half with salsa
