OMG!!! This recipe is AMAZING!! I totally felt like I was cheating, but everything is totally clean!! My friend Marlena shared this recipe with me and I was so excited to try it. I was even more excited that I had everything I needed to make it!! This is a great recipe to chop and prep to make later in the week as well. Family tested, and hubby approved!
Ingredients
Sweet potato - grated
Onion - chopped
Zucchini - chopped
Bell Peppers - chopped
2 Eggs (cooked as desired)
Directions
Drizzle olive oil in a pan and cook sweet potatoes until desired crispiness
In a separate pan brown onions
Toss in Zucchini and Bell Peppers to cook for about 5 minutes
Cook eggs over medium.
Mix all vegetables together and place on serving plate, top with eggs
Note: Next time I make this I will cube the potato vs grating it so it's more like a "country potato" style vs hash browns.
