Today I had the Wrap-N-Roll Mini Pinwheels and they were so yummy!! I've made something similar before and today I still strayed from the recipe a bit but it was even a hit with my 2 year old son who originally said "no mommy" when it was snack time! I love that he eats bell peppers for a snacks...he's done this since he started eating solids and I've been asked more times than I can count "how did you get him to eat bell peppers" or "how did you get him to eat veggies"...well, to be brutally honest...It's not an option for me to feed my family high calorie, high sugar or processed foods...but that's a whole other blog...let's get back to the recipe ;)
Ingredients
*1/2 of a 6 inch whole wheat, low carb tortilla (about 60 calories for the full or 30 for half tortilla)
*2 tsp. light whipped cream cheese (I USED SPICY PEPPER HUMMUS)
*1 Tbsp Roasted red pepper, chopped
*1 Fresh basil leaf
*1 tsp. parsley, chopped
*2 Slices of turkey (about 1-1.5 oz)
Directions
*Spread the tortilla with the cream cheese (or hummus) and sprinkle with the chopped parsley
*Add the basil and peppers
*Top wiht the turkey meat and roll up tightly
*Slice into 1/2 in sections
